We’re pleased to share some insights from Parsley Health coach Erica Zellner, M.S., CNS, LDN — a wise and skillful partner in wellness.
Hello Erica! Thanks for taking the time to share some thoughts. Would you give us an overview of your world?
I spend most of my days balancing my patients at Parsley, my own nutrition practice, and mom life with my two little ones. My work lives at the intersection of functional nutrition, physiology, and real life — supporting people through seasons like pregnancy, postpartum, gut healing, and high-demand careers.
What I love most is helping people reconnect with their bodies and shift from “trying harder” to actually feeling supported. When nourishment is aligned, everything else gets easier — and watching that click for someone never gets old.
Being part of Parsley has allowed me to deepen my clinical work, collaborate with like-minded practitioners, and support clients in a way that’s both evidence-based and deeply personalized. It’s reinforced my belief that sustainable health doesn’t come from extremes, but from consistency and support.
Love that, it’s exactly what Provenance is about too. Speaking of which, what have been your initial impressions of the meals so far?
My first impression was that Provenance gets it. The brand feels thoughtful and intentional without being intimidating, and the order process is refreshingly simple — which matters more than people realize.
I appreciate that the meals themselves are real food: balanced, well-sourced, and actually satisfying. As someone who works with nervous systems and blood sugar every day, I immediately appreciated that the meals feel grounding rather than “diet-y.”
I also appreciated that there were full meal options and meal prep options. As a mom, I need quick options that can fit a lot of palettes, so having open-ended proteins that I can make quick meals around on busy days is a lifesaver.
I’m drawn to meals that include high-quality protein, healthy fats, and vegetables that feel both nourishing and easy to digest. I especially appreciate when meals include mineral-rich ingredients, herbs, and well-prepared vegetables — things that support gut health and metabolic stability. My favorites so far are the creamy dill chicken (I love anything with dill!) and the turkey meatballs.
This is the kind of food I’d recommend to clients who are busy, postpartum, healing, or simply tired of making every meal decision themselves. The flavors are comforting but elevated, the ingredients feel intentional, and the process removes friction — which is often the biggest barrier to eating well. When nourishment is easier, consistency follows, and health improvements happen!
Erica Zellner (she/her) is a Connecticut based Clinical Nutritionist and Senior Functional Nutrition Coach with six years of functional nutrition and health experience. She works with everyone, on issues from biohacking optimizers to tackling complex environmental toxicities like mold.
She earned her Master’s degree in Nutrition and Integrative Health from the Maryland University of Integrative Health. She also holds her Certified Nutrition Specialist (CNS) and Licensed Dietitian-Nutritionist (LDN) credentials.
